Modern meets tradition
The family-owned company Schefer AG looks back on 67 years of bakery and confectionery craftsmanship. Since 2015, Raffael and his wife Lucia Schefer have been leading the business in its third generation, taking over the management of 135 employees.
The heart of the bakery operation lies at the production site in Einsiedeln, where over 30 bakers and confectioners are employed. The 7 sales outlets not only differ in their locations but also in their offerings, ranging from traditional bakery shops to cozy cafes and self-service catering with lunch options.
However, the same values guide all operations: authenticity, joy in work, and quality from A to Z. It is not just for these reasons that Schefer Bakery is well-known beyond the region.
A modern interpretation of traditional craftsmanship.
What may seem like a trend today has been a tradition at Schefer AG. With few exceptions, all ingredients for their products come from the region or at least from Switzerland. The main flour is ground not far from the production site, and even the salami for the sandwiches comes from the local butcher.
Solfina products are used in the gastronomies, ensuring consistent product quality and efficient frying processes. Especially in the bakery during peak seasons, when the fryers run for 8 hours a day, significant savings can be achieved through Solfina. "The time until the oil spoils could be massively extended, and the polar components have improved significantly," explains Raffael Schefer.
Previously, the oil was changed every 1-2 days. Even today, due to the high amount of flour and moisture in the fryer, there comes a moment when the oil needs to be changed.
